Sweet Potato Hash

Still have turkey left over? If you hosted Christmas you probably do. You have used up the rest of your normal sides like stuffing or mashed potatoes. Here is one side dish along with brussel sprouts (minus the bacon) and green beans I brought to Christmas at my in laws.

 

Here are the ingredients:

  • 2 large sweet potatoes cut into cubes
  • parchment paper
  • 1/2 medium bell pepper, chopped optional
  • 2 tsp olive oil
  • paprika
  • black pepper
  • garlic powder
  • sea salt

Heres how I made them:

  1. Preheat oven to 400
  2. First wash the sweet potatoes and dry them
  3. Dice them into cubes place in a bowl
  4. Drizzle the olive oil over the cubes
  5. Add the seasonings and mix well
  6. Line baking sheet with parchment paper
  7. Spread the cubes on the tray
  8. Bake for 25-30 minutes
  9. Eat and Enjoy
