Pineapple Chicken Skewers
I know you love the 21 day fix and the 21 day fix extreme and so excited that Autumn created a cookbook, FIXATE so you would have tons of new recipes to try. Infact you now have 101 new ones. Well I am stoked for the paleo recipes and had to give this one a try.
Summer nights are warm and sometimes we don’t want a hearty and steamy home cooked dish. These are soo yummy. They don’t feel heavy but fill you up.
Plus if you know me I could eat pounds of grilled chicken and never feel full #proteinqueen but trust and believe these were good. Proof is my boyfriend ate all of his!

I had some fun along the way too. Now you can buy already cut pineapple but I find it more cost effective and think it tastes better when you do it yourself with real fresh fruit. So I practiced my ninja carving skills.

Not to shabby right?

Diced Pineapple, Diced Peppers, Diced Chicken
So here is the what you need:

8 bamboo skewers- I used metal ones
-
1 lb raw chicken boneless, skinless cut into 16 1 inch pieces
-
1/4 cup reduced sodium soy sauce, gluten free- I used Liquid braggs amino
-
2 tsp. sesame oil- I omitted that
-
2tsp grated ginger- I sprinkled ground ginger
-
8oz pineapple drained- I used fresh
-
1 medium bell pepper cut into 16 1 inch chunks
-
1/2 large onion cut into 16 1 inch chunks – i skipped onion
These would rock on the grill but I was being lazy and tossed them in the oven instead.
What do you think? I paired them with green beans but a salad would be nice too
