White Chocolate Hemp Tahini Cookies
A couple years ago Kale Junkie’s Life changing tahini cookies were making the rounds. I never tried it because the tahini turned me off. It’s actually not bad at all. I recently partnered with EVO HEMP and got a chance to try their white hemp chips. I figured let’s try these cookies with these hemp chips instead. Otherwise my go to dairy free/ gluten free chips are Enjoy Life Dark Chips

Ingredients Needed
- 1 cup almond flour
- 1 cup tahini
- 1/2 cup maple syrup ( I use this SF brand)
- 1 egg or 3 tbs liquid egg whites
- 1 tsp baking soda
- 1 heaping cup of HEMP chips or regular chocolate chips
- 1 scoop collagen peptides optional (I use the 365 brand from whole foods)
INSTRUCTIONS
- Line a baking sheet with parchment paper and set aside
- Mix together the almond flour, tahini, maple syrup, collagen peptides (if using), and hemp chips

Mix to ensure everything is coated well, and place the bowl in the refrigerator for 30 minutes. DO NOT SKIP THIS STEP, THIS IS THE MAGIC!
- Preheat oven to 350
- Remove dough from fridge. Add egg or egg whites and baking soda and mix well
- Scoop dough onto pan. Should make 16. I used a smaller scoop and got a few more.
- Bake 10-11 minutes
- Remove cookies from oven and let cool
- ENJOY
