Breakfast Banana Muffins

Here is what you need for the banana muffins:
- non stick spray
- 2 cups of flour
- 2tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 1 egg lightly beaten
- 1/4 cup honey
- 3/4 cup unsweetened almond milk
- 1/4 cup melted coconut oil
- 1 1/2 tsp pure vanilla extract
- 3 medium ripe bananas mashed

Here is how to make these breakfast banana muffins
- preheat oven to 350
- prepare muffin liners/ spray with non stick spray
- combine flour, baking soda, baking powder, sea salt in a large bowl and mix well
- In a separate bowl combine eggs, oil, milk, honey and vanilla extract and mix well
- add egg mixture to flour bowl and blend
- Carefully fold in mashed banana
- Divide batter between muffin cups
- Bake 18-23 minutes until the tester comes out clean
- Transfer to a cooling rack
