Here is a simple, healthy, yummy dish you can make and have with eggs in the morning, toss in a salad at lunch or pair with a protein and veggie for dinner.

Here is what you need:

  • parchment paper
  • 2 small sweet potatoes, cut into 1 inch cubes
  • 1/2 small onion chopped
  • 1/2 medium bell pepper, chopped
  • 2 tsp olive oil
  • paprika
  • black pepper
  • garlic powder
  • sea salt

Here is how you make it:

  1. preheat oven to 400
  2. line baking sheet with parchment paper, set aside
  3. combine sweet potatoes, bell pepper, oil and seasonings in a bowl and mix well
  4. place sweet potato mixture on parchment paper
  5. Bake 25-30 minutes, stir occasionally
  6. Enjoy!
