Breakfast Banana Muffins


Need a quick breakfast for on the go or snack for the kids? Give these breakfast banana muffins a try. A perfect recipe for a Saturday morning or during meal prep on Sunday so you can grab and go during the week.

Here is what you need for the banana muffins:

  • non stick spray
  • 2 cups of flour
  • 2tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 egg lightly beaten
  • 1/4 cup honey
  • 3/4 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  • 1 1/2 tsp pure vanilla extract
  • 3 medium ripe bananas mashed

Here is how to make these breakfast banana muffins

  • preheat oven to 350
  • prepare muffin liners/ spray with non stick spray
  • combine flour, baking soda, baking powder, sea salt in a large bowl and mix well
  • In a separate bowl combine eggs, oil, milk, honey and vanilla extract and mix well
  • add egg mixture to flour bowl and blend
  • Carefully fold in mashed banana
  • Divide batter between muffin cups
  • Bake 18-23 minutes until the tester comes out clean
  • Transfer to a cooling rack
  • Enjoy!
