Zucchini Chips: A healthy snack that is kid and bathing suit approved.
If you follow me on social you know I love zucchini and eat it in my first meal of the day, EVERYDAY. However sometimes I eat it in the form of zoodles or these yummy healthy chips! We all want more healthy snack ideas and veggies are the perfect place to start. You can make sweet potato chips, kale chips and zucchini chips. Give these a try! And yes they are 21 day fix approved!
To start preheat oven to 225
- 2 large zucchini very thinly sliced
- 1tbs olive oil or avocado oil
- 1/2 tsp + sea salt
First place the zucchini slices in one layer between paper towels to draw out the liquid.
Next, line two baking sheets with parchment paper.I sprayed mine with pam coconut spray.
Then place zucchini slices on prepared baking sheets.
Brush the zucchini slices with the oil
Next sprinkle on the sea salt
Bake for 2 hours or until golden brown and crispy. I ended up increasing the temp since I was running out of time.
