Sweet Potato Brownies

Well this quarantine will have you doing lots of new things. My cabinets are more organized, i’ve watched a crap ton of Netflix and well, my interest in baking has kicked in over time. So why not give sweet potato brownies a try!


  • 3/4 cup sweet potato puree
  • 1 cup nut butter of choice (I was out of almond butter but I always have PBFIT or PB2 on hand)
  • 1/3 cup Monk Fruit sweetener  I was out, used 2/3 of swerve which was too much so use 1/3 cup
  • 1/4 cup cocoa powder
  • 1/4 cup almond flour
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • dash sea salt
  • 1/3- 1/2 cup dark chocolate chips

Lets make these sweet potato brownies

  1. Preheat oven to 325
  2. line a 8×8 baking dish with parchment paper, spray with non stick spray
  3. Rinse the sweet potato, boil, cool slightly. Peel off skin
  4. Mix up the PBfit if using
  5. Blend sweet potato to make puree
  6. Mix sweet potato puree, nut butter, vanilla in a large bowl
  7. Mix in almond flour, cocoa, baking soda, monk fruit, sea salt and stir well
  8. Fold in dark chocolate chips
  9. Pour batter into baking dish, spread out evening
  10. Bake 20 minutes
