Oatmeal Banana Berry Muffins

Are you a big muffin eater?  Normally I am not. But a neighbor just passed so I wanted to bring something easy over for her adult children as they come in and out of her home making arrangements. So I decided to make these. They were quite easy to make and they were healthier than making cookies!


Here is what you need:

  • Nonstick cooking spray
  • 2 large eggs, lightly beaten
  • 1 tsp. pure vanilla extract
  • 2 large bananas, mashed
  • 1 Tbsp. raw honey
  • 2½ cups old-fashioned rolled oats
  • 1 Tbsp. ground cinnamon
  • 1½ tsp. baking powder
  • 1½ cups unsweetened almond milk
  • 1 cup fresh blueberries (or raspberries

Preheat the oven to 350

  • you can use the spray I used muffin papers
  • combine eggs, extract, bananas, and honey in a large bowl. Mix well and set aside
  • combine oats, cinnamon, and baking powder in a medium bowl and mix well
  • add the oats to the egg mixture and continue to mix
  • add almond milk and mix well. I only used 1 cup
  • divide oat mixture evenly into the muffin cups
  • top evenly with blueberries about 5 per muffin or more if you would like
  • bake 24-30 minutes, until golden brown. Test with a toothpick until it comes out clean.

Eat and enjoy, for more protein you could pair it with Greek yogurt.

I cooked mine for about 24 minutes and had enough for 14 muffins so I guess I could of added more to some cups
