Meatless Stirfry- simple and delicious

Today’s lesson: Meatless doesn’t mean tasteless

I used to LOVE using meatless crumbles, tofu pups (hot dogs), and other meatless products. I started to follow a more paleo lifestyle and they don’t eat anything soy, they have good reasons. I do however ALWAYS make sure my soy products are NON GMO. However, I had a craving for something other than chicken and ground turkey.

I also am a spaghetti -squash-a-holic!!! I also like to THROW food in a pan and get creative. So I make these types of mixed strifry dishes frequently. Here is what you need.


spaghetti squash- 1-2 cups

1-2 servings of defrosted boca meat

chopped onion

chopped celery

chopped bell pepper

broccoli florets

salt free seasonings- italian, basil, black pepper, cayenne, paprika

Optional- I also added 2 tablespoons organic salsa

non-cooking spray


I sprayed the pan and added the veggies to cook up a few minutes. Then I added the Boca meat and seasonings. While that was cooking I had the spaghetti squash cooking in the microwave. I choose to cut smaller pieces and steam in the microwave since only I eat it, my boyfriend hasn’t fallen in love with it like I have.

Next I add the salsa to the pan, and then for a final minute add in the spaghetti squash and mix together.

Scoop into a bowl and enjoy!
