Gluten Free Chocolate Chip Cookies
Growing up these were probably your fave thing to bake or that your mother baked. They are just so yummy. I was a sweets eater like no other growing up. My sweet tooth was out of control and I loved every bite.
I still have a sweet tooth. I also have food intolerances and I am so hyper focused on the types of food I put in my body. I am not about depriving myself of chocolate (hello I drink a chocolate shake daily) but I try and make sure, even if it is a treat, its a healthier treat!
Here is what you need:
- 1/4 c extra virgin coconut oil (solid) I used ghee
- 1/2 c coconut sugar I used Lakanta Monk Fruit Sugar Substitute (I use this in all my baking)
- 1 large egg yolk (can also use 1 whole egg)
- 1 tsp pure vanilla extract
- 1 c gluten free all-purpose flour (I used fine ground almond flour)
- 1/4 tsp gf baking soda
- 1/4 tsp gf baking powder
- 1/2 tsp sea salt
- 1/4-1/2 cup dark chocolate chips
****I highly recommend the enjoy life brand chocolate chips. No fillers, no crap, no gluten, dairy, soy, nothing artificial. Remember put good in get good out****
Here is how to make them:
- Preheat oven to 325
- Line baking sheet with parchment paper
- Combine oil and sugar in a large bowl and mix well
- Add egg and vanilla and mix well. Set aside
- Combine flour, baking soda, baking powder and salt in medium bowl, mix well
- Add the oil mixture to flour mixture and mix it up well.
- Fold in the chocolate chips
- Roll into Tbs sized balls (can use a TBS measuring scoop)
- Flaten the balls a bit on the pan
- Bake 10-12 minutes
