Healthy Egg & Veggie Muffins
Here is a super handy way to start your day without any prep. I run monthly online fitness groups and I encourage all my members to prep on Sundays for the week. These are easy and healthy and save you tons of time during the week, especially if you have rushed busy mornings. Take an hour or two on Sunday’s to meal prep and it will save you time and calories during the week.
- Veggies- we used spinach and bell peppers
- Protein- if you are adding in sausage or ground meat
- Seasonings- black pepper, Flavor God, sea salt, garlic powder
- Coconut oil spray
- Muffin pan
Preheat the oven to 350
Dice up your veggies. I even diced up my spinach.
Spray the non stick spray inside the muffin cups.
I placed veggies inside the muffin tins and then added 1 egg in each cup.
Boom egg muffins!
Sprinkle some of your fave spices on each one to your liking. I placed my muffin tin on a baking sheet to make it easier placing in the oven. Cook for 15-20 minutes. I don’t like runny eggs so I cooked mine a bit longer. Just make sure the tops are browning. How good to these egg muffins look?
Let them cool and then remove and place in a storage container for the week. Now you have quick and easy grab and go breakfasts, egg muffins, for you and the kids. Feel free to share with others.
