These creamy spinach noodles were BOMB

They sneak in tons of veggies but they are also dairy free, gluten and grain free too. I know!!!

I have found some amazing recipes in the Made Whole Cookbook  

This is 2 of the recipes from MADE WHOLE COOKBOOK

I did tweak some of the original recipe to fit what I have on hand and a few ingredients I don’t eat. So this is my version. I was pairing this with chicken so place chicken in the oven first then begin steaming cauliflower.

Cheesy Yellow Sauce

  • 1 1/2 cups steamed, mashed cauliflower florets (about 1 small head) hot
  • 1/2 cup full fat coconut milk (I didn’t have any so I doubled the cooking fat
  • 1 tbs butter or ghee ( I used coconut oil)
  • 1 1/2 tsp coconut vinegar ( I used apple cider vinegar)
  • 1 teaspoon sea salt
  • 1 tsp garlic powder
  • I don’t use nutritional yeast as Ive had  issues learn more  I used turmeric & curry powder instead
  1. Steam the cauliflower
  2. Combine all ingredients and add to a blender
  3. Blend until completely smooth
  4. Set aside

Creamy Spinach Noodles

  • 4 cups fresh zucchini noodles
  • olive oil, sprinkle sea salt/ black pepper
  • 3-4 cups fresh spinach ( wish I used more)
  • 2 tbs butter (or ghee or coconut oil)
  • I used garlic powder (can use 6 garlic cloves)
  • 2 tbs olive oil
  • 1 tsp sea salt
  • black pepper
  • 1+ cup of cheesy sauce (recipe above
  1. Make the zoodles ( use a spiralizer)
  2. Add to a skillet with some olive oil
  3. Sprinkle sea salt/pepper
  4. While zoodles are cooking, make the cheesy sauce in a blender
  5. Then place cooked noodles in a large bowl set aside.
  6. In the same skillet add the butter and spinach and garlic powder & saute
  7. Combine the zoodles to the spinach skillet mix and blend
  8. Pour in the cheese sauce and mix well
  9. Plate the cheesy noodles
  10. Pair with the grilled chicken and enjoy
