What was one treat from your childhood you enjoyed? Aside from the swiss cake roll, or ring ding, for me it was the chocolate trifle recipe. Yes I am a chocolate lover!!!! This is a dish my mom and my aunty made for many get-togethers. Its so easy and oh so yummy.

For my friends who don’t like chocolate, you can swap this out for angel food cake, vanilla pudding, and add fresh blueberries and strawberries its also a yummy dish.

I am constantly creating low carb, low to no sugar gluten free treats because I have always had a sweet tooth but also care about health and whole food nutrition. Now…. this is when I make an exception for “sugar free” foods. Sugar free pudding and maple syrup are the 2 items I still buy that are “sugar free”. Feel free to use the ones with sugar or a healthier brand than JELLO

Here is what you need to make a chocolate trifle:

  • 1/3/4 cup gf flour (I used half almond flour half gluten free flour
  • 1 cup monk fruit sweetener
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp sea salt
  • 1 cup unsweetened coconut/almond milk + 1 tbs white vinegar
  • 1/2 cup avocado or coconut oil
  • 2 eggs room temp
  • 2tsp vanilla

Lets make the cake:

  1. Preheat oven to 350
  2. Spray 2 round cake pans
  3. Mix flour, monk fruit sweetener, sea salt, baking soda, baking powder, cocoa well
  4. In a separate bowl mix eggs, milk mixture, oil and vanilla together
  5. Slowly add the wet into the dry, mix well
  6. Pour the batter into the round cake pans
  7. Bake 35-38 minutes
  8. Once done, remove and let cool completely

Lets make the trifle:

  1. While cake is cooling mix mix the pudding according to directions, I let it chill while cake is still cooling
  2. I recommend a deep trifle dish, or really deep round bowl
  3. Crumble cake on the bottom layer of bowl
  4. Layer chocolate pudding
  5. Layer cool whip
  6. Repeat another layer of cake, then pudding, then cool whip until you reach the top
  7. If you have remaining cake crumble on top to decorate
  8. Sprinkle some dark chocolate chips on top
  9. Eat and enjoy or place in fridge to remain cool
