Chocolate Pudding Brownies
I love trying to create or make sweet treats, but I strive to use healthier ingredients. While I normally stay AWAY from “sugar free” foods. The two times I choose sugar free foods are maple syrup and instant pudding.
Here is what I used:
- 1.3 oz instant pudding ( I used cook n serve since I had it on hand)
- 1/2 cup flour (I recommend almond flour though I used coconut and wish I hadn’t)
- 1/4 tsp baking powder
- 1/3 cup melted coconut oil
- 2/3 cup monk fruit sweetener
- 2 egg whites (can use whole eggs)
- 1 tsp vanilla
- 1/3 cup Enjoy Life Dark Choc Chips (optional)
Here is how you make them:
- Preheat 350
- Line pan with parchment paper (I used 8×8 but wish I used a smaller pan so the brownies would be thicker!
- Mix pudding, flour, baking powder, Monk fruit sweetener together
- Add in the oil, eggs, vanilla
- Mix well
- Fold in the choc chips if using
- Spread the batter into lined pan
- Bake 25-30 min
