Chicken Thigh & Veggies Sheet Pan

*To be honest I have never had or bought chicken thighs before. I know they are cheaper than breasts but also have a bit more fat. Well I decided to buy them (I did trim off as much excess fat as I could). However the taste is basically the same but I found the texture a tad different than breasts*

I found a chicken thigh and veggie sheet pan recipe from The Cast Away Kitchen ( I love her book MADE WHOLE ) I tweaked a few things based on what I had in the fridge.

You need:

  • sheet pan
  • parchment paper
  • non stick spray
  • 2 small zucchini sliced
  • 1 yellow bell pepper
  • dozen plus brussel sprouts sliced
  • olive oil
  • 6-8 boneless thighs
  • sea salt
  • black pepper
  • garlic powder
  • coconut amino (optional)

How to assemble:

  1. preheat oven to 400
  2. lay parchment paper down spray with non stick spray
  3. Arrange the veggies on the tray
  4. drizzle olive oil over veggies
  5. sprinkle seasonings on veggies
  6. In a pan heat olive oil and add chicken thighs
  7. Sear both sides until brown
  8. Place browned thighs over the veggies
  9. Add more seasonings and drizzle coconut amino on top if using
  10. Transfer sheet pan to oven and cook 20-25 minutes
