Banana Chocolate Chip Muffins
I saw a banana chocolate chip cupcake recipe on Kale Junkie’s instagram. So I decided to make muffins. I don’t really like banana but we had 2 overly ripe so I gave these a try. These banana chocolate chip muffins were good.
Here is what you need to make the the muffins
- 2 cups almond flour
- 2 ripe bananas (more if you like them)
- 3 egg whites (or 3 eggs)
- 1/4 cup almond milk
- 4 tb coconut oil, melted
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/3 cup monk fruit sweetener
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 3/4 cup dairy free chocolate chips
- 1/4 tsp sea salt
Here is how to make them
- Preheat oven to 350
- Line muffin pans I use these silicon liners
- In a blender blend the bananas, egg whites, sweetener, coconut oil, vanilla, almond milk
- Add the dry ingredients (almond flour, baking soda, baking powder, sea salt
- Mix in chocolate chips (do NOT blend)
- Spoon batter into each muffin tin filling 3/4 full
- Bake 17-20 min
- Remove, let cool and enjoy
