Banana Apple Gluten Free Muffins 21 day fix approved
These little bad boys are anything but bad for you. They are perfect for kids who refuse to eat breakfast, easy to grab and go, great snacks to send with kids lunches or a quick after workout bite before your protein shake.
The best part is they are easy to make and GLUTEN FREE
- 2 large eggs beaten
- 1 cup banana mashed (about 2 medium bananas)
- 1tbs. grass fed butter melted
- 1 1/2 cups almond flour
- 3/4 tsp. baking soda, gluten free
- 1 dash sea salt
- 1/2 cup chopped apple
Preheat oven to 350
Prepare the muffin cups by lining the pan or praying. I find using paper cups is best.
Combine eggs, banana, and butter in a medium bowl, mix and set aside.
Combine almond flour, baking soda, and salt in a medium bowl and mix.
Slowly add the almond mixture to the egg mixture and stir well.
Add apple and mix until just blended.
Divide batter evenly in the prepared muffin cups.
Bake 16-18 minutes or until golden brown and a toothpick inserted into the center comes out clean.
Transfer muffins to a rack to cool.
