Today’s Lesson: Dinner doesn’t have to be time consuming; you don’t have to be a chef to create a yummy FAST dish.
I don’t know about you, but I am NOT a Chef. I like my food simple, healthy and quick. I do prefer to make my own food rather than eat out or have someone cook for me (yes I realize that puts me in the minority), but that’s the way I am.
I am a creature of habit and literally eat the same things most days. Every day one of my students asks whats for dinner and I usually respond grilled chicken, steamed green beans and spaghetti squash. But I do create some other dishes here and there. Yes sometimes I get really creative and I think my food taste YUMMY but my boyfriend shakes his head. Because he cannot imagine pairing certain foods together. Opposites attract I guess.
5 minute cook time
- Spray nonstick pan with Pam or other cooking spray
- Add diced green beans, peppers, onions and cook
- Add in diced chicken- let cook a couple of minutes
- Add in salsa- as much as desired I add just enough for flavor
- Heat a RUDI Plain GF wrap in microwave for 15-20 seconds
- Spoon chicken mixture into wrap
- Fold it up
- Place remaining chicken mixture on side of wrap
- Eat and enjoy
- Optional- shredded cheese, greek yogurt(to replace sour cream)diced avocado
Easy Peasy and super Yummy.
